This is a bit like having a raw vegan version of fried rice. The avocado fats in the dressing make it a very filling and satisfying dish. A great accompaniment to a fresh garden salad.
I large cauliflower head
1 cup flat leaf parsley chopped
2-3 green onions finely chopped
2-3 celery stalks sliced finely
1 corn on the cob - corn sliced off
Ingredients Avocado Dressing
2 ripe avocados
2 limes or lemons juiced
1 sprig of fresh dill
1/2 -1 tsp pink salt (add to taste)
What to do:
Cauliflower Rice Salad
1. Chop the head pieces from the cauliflower, and place them into a food processor. Process until they become a rice like consistency.
2. Put the cauliflower rice in a large bowl and add all other ingredients.
3. Mix well.
Avocado lemon or lime dressing
1. Add all dressing ingredients into a blender and blend until smooth and creamy.
Pour the dressing over the cauliflower rice salad and mix well until the dressing has covered the whole dish, turning it slightly green.
Enjoy as an accompaniment to a fresh garden salad, kale pesto salad, or inside a cos lettuce leaf as a wrap.
You can also use this inside some raw nori wraps and eat as a raw sushi dish.
