Hemp Seed Tabouli

  • 3 cups fresh parsley
  • 1cup fresh mint leaves
  • 1 tomato chopped into small pieces
  • 1cup hemp seeds
  • 1 small red onion chopped finely
  • 2 tbs olive oil
  • 2 tbs lemon juice
  • ¼ tsp Himalayan salt, or to taste
  • Optional: A generous sprinkle of dulse flakes

NB: if you don’t like raw sweet potato you can replace this with grated carrot.

What To Do
Process the parsley, mint and slat in a food processor until minced.

Transfer to a large mixing bowl.

Add the tomatoes, hemp seeds, onion, oil and lemon juice. Mix all ingredients together well.
