Kelp Noodle Salad
1 x packet kelp noodles
1 large zucchini grated
1 small sweet potato grated
1 bunch coriander chopped
2-3 spring onions chopped
7-8 mint leaves
Optional: ½ cup living sprouts of your choice
What To Do
Place the kelp noodles in a bowl of water to soak. Make sure they are covered to the top, and set aside for 15 minutes while you prepare the rest of the vegetables.
Once soaked, cut the kelp noodles up into smaller pieces.
Place all the grated zucchini and sweet potato, and the chopped coriander into a bowl. Add the kelp noodles and toss all together adding
Salad Dressing Ingredients
¼ cup olive oil
¼ cup raw cashews
1 tbs chopped ginger
2 tbs tamari
½ lemon juiced
1 heaped tbs tahini
1 fresh chilli (if you like a bit of spice)
Himalayan salt to taste
What To Do
Add the dressing to the noodles and mix all together until well covered.
You can add some dulse flakes, a few crushed nuts or sesame seeds as a topping with some more flavor and crunch.
